Can you eat sprouted lentils?

I made a stew with lentils the other day and now I see that the lentils sprouted a bit. I know people sprout lentils all the time, but I here that they usually leave the lentils in sunlight in water rather than leaving them in the fridge in stew. I don't know if because they were in the cold fridge that it makes a difference....
